海美寿司（Umi Sushi）は、豊洲市場から届く旬の魚を中心に、一貫一貫に丁寧な仕事を施してご提供する江戸前寿司店です。

魚の状態を見極め、熟成や仕込みを施し、その魚が最も美味しくなる状態で握ること。
シャリ、醤油、海苔に至るまで、一貫の寿司をつくるすべてを大切にしています。

本格的なカウンター寿司でありながら、初めてカウンター寿司を体験される方や、お子様連れのご家族にも、緊張せずお食事を楽しんでいただけるアットホームな空間を目指しています。

コース終了後には、「もう少し食べたい」「あのネタをもう一度食べたい」というお客様のために、当日のネタからお好きな寿司を追加でご注文いただけます。

お飲み物は、寿司との相性を考えて全国から選んだ日本酒を常時約10種類ご用意。寿司と楽しむためのワインも取り揃えています。

Authentic Edomae Sushi in Ishigaki, in a Relaxed and Welcoming Atmosphere

Umi Sushi is an Edomae-style sushi restaurant in Ishigaki, featuring seasonal seafood sourced primarily from Toyosu Market in Tokyo.

Rather than simply serving fresh fish, we carefully prepare each ingredient using traditional Edomae techniques, including aging and other preparations when appropriate, to bring out its best flavor and texture.

Every detail matters to us — from the fish itself to the sushi rice, soy sauce, and nori — all carefully selected and prepared to create each piece of sushi.

While we take our sushi seriously, our atmosphere is relaxed and welcoming. Whether it is your first experience at a Japanese sushi counter or you are visiting with your family, we want you to feel comfortable and enjoy your time with us.

After your omakase course, additional sushi can also be ordered from the selections available that day.

We offer around 10 carefully selected Japanese sake from breweries across Japan, chosen to pair beautifully with sushi, as well as wines selected for sushi.

English-speaking guests are very welcome.

English assistance is available from reservation through your dining experience. We are also happy to explain the sushi, ingredients, and preparation in English, so you can enjoy not only the food, but the experience of an authentic Japanese sushi counter.

Families with children are also welcome.
